Free range, low in fat and high in protein - is it any suprise that we completely adore venison? Scotland has some of the best venison in the world so of course we take full advantage of the fabulous game we have right on our door step. From our signature 158 venison hot dog to our juniper and garlic roasted venison loin, this gorgeous piece of game is a stalwart on our menu and something we love to cook with, both day to day and in our specials.
Venison has a wonderful strong and gamey flavour with a very close texture. It's delightfully tender and it's best served rare to medium rare. We use the loin for our main dishes and the taste is unbelievably rich.
This super lean meat is great when served with either sweet or sour components to balance it out. It works great with anything pickled or honey and is super tasty when paired with some light spices. Our Juniper & Garlic Roasted venison pays homage to many of those notes with honey figs and our gingerbread croutons. It's so light that it melts in the mouth, really nothing else quite compares to it.
We're so lucky to have so much fantastic produce so close by and being able to use it on a daily basis is the best. It's just part of why we love what we do!
